10. Let the cake cool for 3 hour at room temperature.
11. Make sure you cover the baking tin with plastic wrap so it doesn’t become dry while cooling. Put it on a plate upside down if you are not using a spring form tin.
12. Sprinkle graham crackers on the bottom of the cake. Make sure you are doing the step slowly and carefully. Press in the crackers so that they settle in. Turn the cake and refrigerate overnight. Make sure it holds the crackers well by the next morning.

Chocolate, orange, almond Simnel cake!

This unique, healthy and rich treat is made usually during Easter celebrations. But this homemade chocolate, orange and almond filled cake is a great delight for every occasion. If you do not like the same old traditional fruit cake then try the Simnel cake…

Ingredients to make the cake: -
·         250 grams of salted butter
·         400 grams of flour
·         500 grams of caste sugar (golden)
·         100 grams of orange flavoured chocolate or you can use 100 grams of plain chocolate with 2 teaspoons of orange extract. (if you want a natural way to make this recipe then use fresh orange juice which you make at home by yourself)
·         25 grams of cocoa powder
·         1 teaspoon of bicarbonate of soda
·         2 medium eggs
·         280 ml tub buttermilk
·         Zest and juice of one orange

For the marzipan you need: -
·         85 grams of caster sugar
·         100 grams of icing sugar
·         50 grams of cocoa powder
·         one egg, plus one yolk (beaten)
·         200 grams of almonds
For the icing: -
·        500 gram tubs of mascarpone
·        250 grams of butter
·        250 grams of icing sugar
·        Zest of 2 oranges plus juice (100ml)

Method to make the cake: -
  1. Pre-heat the oven to 180 degrees. 
  2. Grease 2 baking tins
  3. Over medium flame, put butter and chocolate in a small pan and keep stirring until it melts well. Remove from flame and mix in flour, sugar, bicarbonate soda and cocoa. Add a pinch of salt to the bowl. 
  4. In another bowl, whisk the eggs, orange zest and juice and buttermilk together. Scrap in the chocolate and egg mix into the dry ingredients and add 150 ml of boiling hot water into this container. Now whisk all these together using an electric whisk until there are no lumps in the batter and it is smooth.
  5. Divide this mix into the tins and bake for 40 to 45 min. Set them aside to cool. 
  6. In the meantime, prepare the marzipan. Put in sugars, ground almonds and cocoa in a container. In the middle of the mix, put the egg and egg yolk and mix it really well with a cutlery knife. Wrap this in cling film and keep it aside. 
  7. Now for the frosting, beat together the mascarpone and butter together. Add in the sugar, zest and juice and continue beating. 
  8. Assemble the cake by splitting in into half and placing frosting insides the cake. Spread it evenly and place the cakes on one another. Put a little frosting on the top as well. Roll the marzipan on cocoa and make it into a circle. Place this carefully on top of the cake. Use the frosting to stick them well and your cake is done!

Make Christmas toffee at home!

  • One cup of slivered almonds

  • A pinch of salt
  • A teaspoon of vanilla extract or vanilla essence
  • A pack of milk chocolate chips or dark chocolate chips
  • And lastly, half a cup of chopped almonds.
Steps to make the Christmas almond and chocolate toffee: –
The approx. time to make, cool and prepare this toffee is 2 hours.
  1. Firstly, grease the pan with little butter and keep it aside.
  2. Now, in a saucepan melt the remaining butter. Gradually add sugar, slivered almonds, salt and then water. Keep stirring this mix on medium speed. If you have a candy thermometer then let it heat until it reads 295 degrees. If not then wait for a little boil to come.
  3. Remove it from heat and add the vanilla essence or extract and stir well.
  4. Now pour this mix into the greased pan. Spread evenly on the pan and leave it at room temperature for about an hour.
  5. After this, take a microwave safe container and melt a cup of chocolate chips. Spread this over the toffee which is cooling in the pan. Let it refrigerate for 50 minutes until it sets and cools well.
  6. Invert the toffee onto a large baking sheet and melt the remaining chips. Now spread this liquid chocolate over the toffee.
  7. Sprinkle the finely chopped almonds on top of the chocolate spread and leave it for about an hour at room temperature.
  8. Break the pieces in any shape you like and put the toffee in an airtight container.
  9. You can store it in the fridge for a while before you put it in a fancy jar for gifting. It will settle the almonds and chocolate well. It is best to prepare this a night before gifting.
  10. Also, if you are a baking maniac and love cooking these items, then you should own a candy thermometer. This will help you know the appropriate and right temperature. Sometimes, you could go wrong with your judgement. It is better to rely on the thermometer.

Food is the food of life

Food is the basis of life. Whatever we do in life, it all comes down to one thing- food. Come to think of it, we can live without so many luxuries in life, but the absence of food would just wipe us off the face of the earth, in the literal sense. In today’s hyper frenetic world, where everybody seems to be rushing off ‘to somewhere’ or rushing back ‘from somewhere’, the ultimate motive is just to fill our stomachs, to keep us alive. We strive to earn, to succeed in life, to gain name, fame and what not. But in the end it is food that we really need (with housing, clothing attached). 

Apart from the basic need for food, food is a wonder. Food is yummy. I am a foodie. So, for me, food is worship. I wait for that time of the day when I will have food. You could call me a glutton, but that’s the truth. So many people only tuck in whatever little is needed to feed their bellies and then rush to work. They forget to savour the delight in food. 

No wonder there are so many variants in food. We have Indian, Thai, Continental, Mughali, French, Italian…the list is endless. We have divisions and sub-divisions and sub-sub-divisions in food. This, in itself, shows how crazy people are for the thing which keeps us alive and going. Without the intake of which, we would lack the very energy which we really need to get our work done. 

There are various channels on television solely devoted to food. I envy food critics travelling the world, tasting delicious food and giving their opinions. Of course, there is more to it than that, but the idea is quite appealing. 

Well, apart from the taste, the right kind of food is necessary: balanced diet. Just eating won’t do. Healthy eating is important too. Just stuffing anything and everything down the throat will well-nigh work towards the opposite of giving us vitality and strength. As the saying goes, ‘Excess of everything is harmful’. 

Since food works towards giving us the most important amenity for us which is life, I believe we could do well to respect its greatness and value its worth. Give your food time, savour it.
